Sattu Maavu Fruit Cake

Sattu Maavu Fruit Cake, today we will see how to prepare sattu maavu / health mix flour cake recipe using simple steps. I have used 3/4 cup sattu maavu and 1/4 cup multigrain flour.  This is not gluten free cake recipe. I have used eggs and butter too. The texture was just perfect. Usually we south indian use sattu maavu to prepare porridge / kanji but the same flour can also be used to prepare cake, muffins, cookie, ladoo, barfi, idiyappam, puttu, etc. I will share all the recipes which can be tried using sattu maavu or multi millet sattu flour.

how to prepare sattu maavu fruit cake at home using simple steps

Ingredients
  • ¾ cup sattu maavu / health mix flour
  • ¼ cup multigrain atta
  • ¾ cup chopped fruits (black raisin, tutti frutti, glazed cherries, walnuts, cashew, dates, prune, orange rind)
  • 1 tbsp orange marmalade
  • 2 large eggs
  • 1 tbsp butter
  • ½ cup palm jaggery
  • ¼ cup water
  • 1 tsp vanilla essence
  • ½ cup plus 2 tbsp olive oil
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ tsp nutmeg powder
Instructions
  1. Heat butter in a pan. Once it melts, add chopped dry fruits, palm jaggery and water. Mix well everything and cook on low medium flame till the dry fruits becomes soft and you get thick syrup. It took me around 5-8 mins. Remove from the heat and allow to cool.
  2. Break one egg and whisk it using electric beater or hand whisk. Add another egg and repeat the same till you get smooth mixture.
  3. Add vanilla essence and olive oil. Whisk it again. Mix multigrain flour, sattu maavu, salt, baking powder, cinnamon and nutmeg powder. Add dry mixture to wet mixture. Combine everything.
  4. Finally add prepared fruits and nuts syrup. And just fold it. Preheat oven at 180 degree C for 10 mins. Grease cake pan with oil and sprinkle flour. Spread the flour nicely. Fill the pan with cake batter.
  5. Bake for 30-35 mins or till a toothpick inserted into the center comes out clean. Take out the cake from oven and let it cool completely. Serve it immediately or slice it and store in an airtight container.
